Chia Seed Pudding

This is such a delicious and easy breakfast to have, and you can meal prep them and eat them right from the fridge for easy mornings! I make 5 on a Sunday, and have one each weekday for breakfast. They can be stored up to around 5 days in an air tight container. I put them in mason jars (also easy to mix because I can just shake the jar).

Ingredients

Makes one chia pudding

  • 3 tablespoons of chia seeds
  • One cup of Plant milk (I use VitaSoy Milky)
  • 2 Tablespoons of maple syrup
  • 1/4 teaspoon of vanilla essence (optional)
  • Optional toppings of whatever you like

Method

  1. Combine all ingredients together and give a good stir
  2. Let sit for a while, preferably in fridge for 30 mins to 2 hours
  3. Top with whatever you like on top, I usually add in some frozen berries (but fresh is best!)
  4. You can eat it now, or give it another good stir and place in fridge and store overnight (or up to 5 days-ish)
  5. That’s it! Enjoy the plant based goodness
