This is such a delicious and easy breakfast to have, and you can meal prep them and eat them right from the fridge for easy mornings! I make 5 on a Sunday, and have one each weekday for breakfast. They can be stored up to around 5 days in an air tight container. I put them in mason jars (also easy to mix because I can just shake the jar).
Ingredients
Makes one chia pudding
- 3 tablespoons of chia seeds
- One cup of Plant milk (I use VitaSoy Milky)
- 2 Tablespoons of maple syrup
- 1/4 teaspoon of vanilla essence (optional)
- Optional toppings of whatever you like
Method
- Combine all ingredients together and give a good stir
- Let sit for a while, preferably in fridge for 30 mins to 2 hours
- Top with whatever you like on top, I usually add in some frozen berries (but fresh is best!)
- You can eat it now, or give it another good stir and place in fridge and store overnight (or up to 5 days-ish)
