Vegan Aioli

The credit for this recipe goes to Revive Cafe cookbooks! I used their recipe and have tweaked it a TINY TINY bit, so this is my tweaking of their recipe!

Should make a batch of around 900ml to 1L

You will need a food processor, or something where you are able to blend WHILST adding ingredients (NutriBullet etc, won’t work/is too difficult for this recipe)

Ingredients

  • 1 cup of plant milk (I use soy, specifically VitaSoy Milky)
  • 1 tablespoon of wholegrain mustard
  • 1 tablespoon of apple cider vinegar
  • 5 cloves of garlic
  • Half a lemon
  • 1 teaspoon of salt
  • 2 cups of oil (I use rice bran)
  • 1/2 cup of water

Method

  1. Blend together all ingredients in a food processor aside from the oil and water
  2. Once blended, you will continue to blend and SLOWLY add in the oil. Too fast and it will lead to separating
  3. Once fully blended with all the oil, slowly add in the water until desired consistency! (I usually end up using around 1/4 cup of water to 1/2 cup of water)
